I'll second the angel food cake.
Here's a good idea for dressing it up:
Or you could make a diet coke cake, it doesn't get much easier than that.
it was from a 'healthy' cookbook. But, there are many things to do with angel food cake, such as sliced with a berry sauce.
I made this carrot cake to take to work where there are a bunch of weight watchers - I asked my sister in law to figure out the 'points' for me. She told me 7 points a piece. I don't know how accurate that is, but it is delicious! I prefer the full-fat frosting (of course, right?), but the suggested frosting is fine too.

I say definitely try the diet coke cake; I've made it into cupcakes for family gatherings and they didn't know the difference! i frosted it with a frosting consisting of almost a whole small top of whipped topping, a package of vanilla pudding, and 1 cup of milk. You can change the flavors and light versions to your liking. Angel cake is good too. A great way to serve it is with a fruit compote and whipped topping. I make fruit compote per person with 2 tsp flour, 1/8 tsp vanilla, dash of salt, 2 tbsp cold water, and 3/4 c sliced strawberries. This I microwave for 2 min. You can try subbing any fruit like cherries, apples -with cinnamon, blueberries, or whatever. Good luck! =]
