Low Calorie (low carb, too) Eggnog! Oh, yummy!
With Thanksgiving just around the corner, and the Christmas party season not far behind, I have finallyperfected my low-calorie version of eggnog for the holiday season. Of course, my version doesn't contain any eggs because (a) I'm not eating raw eggs and (b) who wants to COOK their eggnog? (Not me!) While nowhere near as decadent, thick, creamy and sweet as regular, 400-calorie-a-cup eggnog, this is a delightful alternative that you should really enjoy.
INGREDIENTS:
one container (4 cups) unsweetened vanilla Almond Breeze (160 calories / 4 carbs)
one package (4 servings) Jello cook n' serve fat free, sugar free vanilla pudding mix (80 calories/ 20 carbs)
two teaspoons vanilla extract (24 calories / 1 carb)
two teaspoons imitation rum extract (24 calories / 1 carb)
cinnamon, nutmeg and/or pumpkin pie spice (to taste)
PREPARATION:
Add everything to a blender, and blend. (If you are serving it right away, add 4-6 cubes of ice to make it colder/frothier). Sprinkle nutmeg or cinnamon on top, or add a cinnamon stick. Can also be garnished with light whipped topping (calories not included). If not serving right away, it does best refrigerated for 3 hours. Serve very cold. Makes four one-cup servings (actually a teensy bit more ... and a skeench more if you add ice ... just divide it into fourths!)

Is Almond Breeze a yogurt? I've not heard of it.
Unsweetened vanilla Almond Breeze is almond milk, made by the Blue Diamond almond company. It is sold un-refrigerated next to the soy milk cartons in most grocery stores. It is non-dairy, and makes a great "milk substitute" for cereals, smoothies, etc. I only buy the UNSWEETENED vanilla flavor ... just 40 calories a cup (less than 1/2 the calories of skim milk), and a fraction of the carbs found in milk.

It is a pretty decent low-calorie facsimile, taste-wise, to most light egg nogs ... with a fraction of the fat, sugar and calories. Would anyone ever mistake it for "real eggnog"? (snort) Of course not!
It is not super thick, but the pudding mix helps thicken it a bit ... and either refrigerating it or blending it with ice helps keep it nice n' cold and frosty.
Since I can't have "real" egg nog (too much sugar, too much fat, too high in calories), it's a delightful way to get into the holiday spirit in a diet-friendly, guilt-free way.
