i love parfaits, well recently, i just put yogurt, strawberries and special k in a bowl and it's delicious..only 175 cals for a huge serving.

those fruit/ custard yogurt cups and i also love apples and nut butters for sweet healthy snacks/desserts but usually i always have fruit salad or something like that.

I love baking homemade meringue cups (pipe the meringues to resemble small tart cups when they are baked) and filling them with berries, topped with plain greek yogurt that I sometimes flavor (add a little maple syrup, honey, vanilla, cinnamon/nutmeg...whatever you like).  The great thing about this dessert is that you can make it as low-cal as you like--it is all about whether you want to have fat free yogurt, full fat yogurt, creme fraiche, or whipped cream on top.  Also, you can sweeten the meringues with regular sugar, or use splenda (don't know about stevia?).  You can macerate the berries if you like, but I prefer them natural.  The completely low cal version is so good, that your non-dieting friends/family won't even be able to tell that it's a low-cal dessert!

My other favorite is ricotta cheesecake.  It is a little more decadent than the above, but you save a lot of calories from the alternative, full-fat version.  And you can even make it with fat-free ricotta, if you want.  I top this with berries that are macerated in good aged balsamic vinegar.  Tart and sweet at the same time :)

In the summer, I also love making italian granita - basically fruit juice that is "stirred" as it becomes frozen to make an italian ice.  I use freshly squeezed fruit juices, or 100% juices that are unsweetened and not from concentrate (Trader Joe's makes some really good ones).  Very easy, light, and you can make any flavor to please anybody.

Oh yea, parfaits are good. I've recently been crumbling the 100 calorie Oreo packs and layering it in between Dannon Light and Fit vanilla yogurt. Strawberries taste good when dipped in just the yogurt. Ruggles Moosetrack frozen yogurt is really good for 140 calories per serving. I also like to slice an apple and sprinkle it with cinnamon and stevia or bake a banana. I know that Hungry Girl has a new book out that has several sections dedicated to just desserts. I might check that out.

- Frozen yogurt

- Apples sprinkled with cinnamon

- Baked apples with cinnamon and brown sugar (I throw some fat free whipped cream on the side for extra yum)

- Some sorbets are pretty good, but they aren't all low-cal

- 100 calorie ice cream sandwiches

I prefer to indulge in high cal desserts

but realy watch my portions on them

like one or two bites of cheesecake

My favourite new dessert is to take fresh strawberries and crush/chop them, then sprinkle about 1/2 a packet of splenda on them and let them macerate. Then I put it on top of some of my favourite vanilla frozen yogurt. :)

Angel food cake with homemade strawberry syrup-I just boil Splenda and water, throw in strawberries, thicken with cornstarch.

Popsicle brand fudge bars- sf/ff

parfaits

-sugar free jello

-sugar free popsicles or fudgesicles

-baked apples with cinnamon and splenda sprinkled on top

-slow churned or light/low fat ice creams

-sorbet or sherbet

-fruit salad!

-1 or 2 hershey's kisses (only 25 calories each!)

-fruit dipped in sugar free/lite chocolate syrup
