low calorie dinner for tonight
anyone know a low calorie chicken recipe ....Preferably baked?

Salsa Chicken (3 servings)
- 3 skinless, boneless chicken breast halves
- 1 (20 ounce) jar salsa
- 1 large red bell pepper, chopped
- 1/2 tablespoon ground cumin
- 2 tablespoons lemon juice
- 1 tablespoon chili powder
- 3 cloves crushed garlic
- 1 (15 ounce) can black beans, rinsed and drained
- Preheat oven to 400 degrees F (205 degrees C).
- Arrange the chicken pieces in a 3 quart casserole dish or a 9x13 inch baking dish. Combine the black beans, salsa, red bell pepper, cumin, lemon juice, chili powder and garlic. Pour the mixture over the chicken and cover. Bake in the preheated oven for 45 minutes; check chicken for doneness (juices run clear?). Serve with rice if desired.
What about baked chicken with some lemon juice, spices, and some veggies on the side!? Or cut the chicken up and throw it in a salad! Low calorie and Mmm Mmm good. :)

a bag of asain veggies and some chicken cut up stir fried with some light sweet and sour sauce just a tad poured over a little bit of rice is really yummy and low cal for dinner or lunch.

Pound out a chicken breast, then spread it with 1 wedge Laughing Cow cheese. Cover it with spinach and put 4 spears of asparagus in the middle. Roll the chicken up around the asparagus and place a skewer through it to hold it in place. Bake at 375 for about 25 minutes! SO good! You could throw some mushrooms, tomatoes, or whatever you want in there!

wow that chicken and asparagus recipe looks amaxing!! It makes me picture somethign from a snooty restauraunt!! I am going to have to try that one!
place one fillet of Tilapia fish on a piece of foil (spray foil with Pam) top with any kind of salsa and vegis, wrap up and bake for 40 min. at 350

I just did this recipe yesterday: ground turkey, mixed with cut spinach, parmesan cheese, onions, yellow peppers, garlic, a bit of soy sauce and bread crumbs. made balls and put them on a baking sheet with cut eggplant, half tomatoes, cut zuchinnis with just a sprinkle of olive oil salt and pepper. baked for about 20 min then broil to get the meat crispy at the top. I enjoyed sooo much with all the vegetables and only a small portion of meat, pretty filling and good taste.
Here is my old low cal yet delicious baked chicken dinner stand-by. Takes like 2 seconds to prep, 30 to cook.

I have a healthy Chicken recipe to share that is oh so delicious!
Take a boneless chicken breast, grill it. Why that is grilling cut up some tomotoes in little cubes/pieces and have your Feta cheese crumbles ready to sprinkle.
In a pan saute some spinach in olive oil and garlic. When chicken is done serve on a plate with saute'd spinach and garlic, then top with tomatoes and then add your Feta cheese on top. Serve it just like that or you can serve it over rice for a more hearty meal. I feel the chicken is just enough for me. It is a very filling meal.
I can not stress enough how WONDERFUL the flavors go together, absolutely delicious and low cal and most of all takes only like 10 minutes to make. You can also substitute cheeses if you don't like Feta for gorgonzola, etc. I would just make sure you use a strong cheese. If anyone out there tries it please let me now how all the flavors matched up.
