I think this Tofu & Mushroom Curry with Brown Rice is a delicious use of a measly 432 calories!

Pan seared tuna steaks that I've marinated in a light balsamic vinaigrette with either butternut squash sprinkled w/cinnamon, a sweet potato, or a nice big salad with fresh veggies.

For breakfast or a snack, I like Quaker Oatmeal Squares or oatmeal with nonfat milk and 1/2 cup of seasonal fruit, especially berries.  Sometimes I substitute fat free yogurt for the milk - makes it seem more like a dessert than breakfast in a bowl.

For lunch, I like a turkey breast meat sandwich, 2-3 ounces on 2 slices of whole wheat bread.  I put 2 tsp mustard on one slice of bread, 1 tbl of fat free mayo on the other, and load it up with fresh veggies like spinach and sweet red pepper slices.

I also love the "Antioxidant Slaw" recipe at savingdinner.com.  Lots of crunch, lots of chewing, and it's calorie-negative - you spend more energy fixing it than it contains!

 

 

 

For lunch today I am making an eggplant and spinach panini on light wheat bread with fat free mozzarella and fat free cream cheese. I use red wine vinegar on the eggplant and grill it on my george forman. For sides I'm steaming broccoli and making a baked sweet potato :-). I try to eat tons of veggies with every meal

That sounds so good!  Do you do anything special to the eggplant before grilling it?  I've heard you're supposed to salt it to take out the extra water before trying to cook it.  Do you leave the skin on, or do you peel it first?  Being the only person in my household who enjoys eggplant, I've never experimented with it from scratch.

If you like eggplant, you can get baba ganoujsh (may not be spelled correctly). It's similar to hummus, but instead of chickpeas and tahini, it's grilled eggplant and tahini. Great on sandwiches!

I Adore: 

- White Clam Sauce (made with olive oil)

- Puttenesca Sauce 

- Grilled/Baked Eggplant or/& Onions

- Spaghetti Squash 

- Grilled Scallops & Shrimp 

- Seaweed & Kelp & Yam Noodles 

My favorite "low-cal" recipe is my Strawberry Fields Salad. I made up the recipe and have it for lunch sometimes a few times a week. I'm not dieting, so I always have lots of side items, but this is a HUGE salad and it's still only about 300 calories give or take.

  • 2 cups romaine lettuce
  • 3 oz. cooked shredded chicken breast
  • 1/4 oz. full-fat (ahem, full-FLAVOR) feta cheese
  • 1 tbsp chopped pistachios
  • 1 tbsp thin sliced red onion
  • 1/4 cup thin sliced red bell pepper
  • 2 oz. or 1/3 cup of sliced strawberries

and then a simple, easy dressing...

  • 1 tsp EVOO
  • 1-2 tsp of Naked Juice Blue Machine Smoothie (wierd to hear, but it actually makes an awesome "berry vinegarette")
  • 1/2 tsp apple cider vinegar or red wine vinegar
  • 1/8 tsp of salt (or to taste)

YUMMO!
