Low-Carb Lemon Curd Recipe

Sweet tart - great on toast.

Ingredients
8 ounces butter, unsalted
1 packet Splenda, quick pack
1/2 cup sorbitol
8 eggs
6 limes, juice and zest
Directions
  1. Whisk all ingredients together in saucepan over medium heat. When mixture begins to thicken remove from heat and whisk for a couple of minutes. Refrigerate.

  2. Blend in blender if you want to remove lumps and grind up the zest.
