Low fat cheese or just less cheese
I remember watching on TV a women making enchiladas and saying how to make a lower cal version she would split the amount of cheese because she'd rather have 1/2 the better tasting cheese then the full amount of diet tasting cheese.
This really made sense to me. Yet now on South Beach I eat low fat cheese and its great. Maybe its an issue cooking with low fat cheese, which I wouldnt know about that.

since i've been trying to eat healthier i've also changed to the lower fat cheeses for many of my recipes and i like it just fine. it's all in what you are willing to live with. i think you can get use to anything and like it.
the only thing i don't use low fat cheese for is on sandwiches, there i still use land-o-lakes regular white american. maybe someday i'll try the low fat for that too.
we'll see about that anyway. lol i know i love pizza hut thin and crispy veggie pizza and i always get it with half the cheese and it's great. don't do it often, but now and then cause it's still not the best because of all the salt in it.
