Low-fat 'creamy' sauce- is there such a thing?

Is there such a thing as a low fat 'creamy' sauce- I'm not overly keen on tomato based ones but it'd be great if there was one that I could use with noodles or rice?

I like using laughing cow light to my pasta/vegetables.  After I saute my veggie's (in cooking spray) I take about a 1/4 cup of the pasta water in with the veggie's, cut up a laughing cow and put it in and let it melt, adding a little more pasta water if it's too thick.  I use a little Mrs Dash seasoning also.  Once it's melted I stir in my pasta.  Tastes like an alfredo sauce.

Tesco, Sainsbury, Co-op, M&S and Waitrose all do sour cream, and most of them do low-fat sour cream, though low-fat creme fraiche is easier to get hold of and can often be substituted in recipes.

Also, Wondra Flour isn't available here in the UK, but you can buy an equivalent, "Carr's Sauce Flour" which I think is basically the same thing - its flour from a specially developed wheat ground extra fine so that you can make a really nice creamy sauce just by adding some sauce flour straight into skim milk. Also, you can make a conventional white sauce by substituting low fat butter - I often use Utterly Butterly - for full fat butter and using skim milk.

Personally, I hate the cloying textre of melted laughing cow and the way it kind of coats your teeth - I'd rather go without sauce than use it.

You can use tofu! I've made a mushroom stroganoff with a similar recipe. It's really good! and has extra protein :)

I just made this last night and loved it!

1/3 cup light onion chive cream cheese

1/2 cup low sodium chicken broth

Mix together in a sauce pan, bring to a boil, simmer for a few minutes until it thickens!

I mixed the sauce with some browned mushrooms and rice last night and it was very very good!
