Recipe Ingredients for Low Fat Custard

1 1/2 c light cream
1 1/2 c milk
1/2 c sugar
1 pinch salt
4 egg yolks
2 tsp vanilla

Recipe Directions for Low Fat Custard

  1. Pour milk and 1 c half & half into small saucepan. Heat over medium for 6 minutes, stirring with a spoon. Do not boil.

  2. In bowl, mix egg yolks, sugar and salt. Pour remaining 1/2 c of cream into bowl and whisk.

  3. Pour egg mix into large saucepan. Pour hot milk into egg mix while whisking.

  4. Heat over medium for 10 -15 minutes. Do not boil.

  5. Place small bowl in larger bowl filled with ice and water. Cover milk with plastic wrap to prevent a skin forming on top. Place in fridge for 3-24 hours.

  6. When chilled, pour into ice cream maker. Add vanilla. Add extras once thick. Chill for 8 hours.
