Recipe Ingredients for Low Fat Dark Chocolate Pudding
| 2 | c milk, 1% |
| 2 | T Unsweetened cocoa |
| 3 | T Sugar |
| 3 | T Cornstarch |
| 1 | t Vanilla Extract |
| 1 | pinch kosher salt |
Recipe Directions for Low Fat Dark Chocolate Pudding
- Mix dry ingredients well, breaking up any lumps with a whisk or fork.
- Add small amount of milk (1/4 Cup) to the dry ingredients, mixing into a paste, then add the rest of the milk, mixing well.
- In a 2 quart microwave safe bowl, microwave for 6-8 minutes, stirring every two minutes. Remove from microwave when the mixture has reached a full boil. Watch it carefully to make sure it doesn't overcook/overflow! Stir in the vanilla extract, then put into 4 serving dishes.
- Put plastic wrap over the top to prevent a skin if you like.
- This is great with fresh fruit. Prepare with Skim or 2% milk if you like, but watch the changes in nutrient values.
