Low-Fat Vegan Waffles Recipe

Each serving has 2 points on the Weight Watchers system.

Ingredients
1 3/4 cup Silk soy milk
0.33 cup applesauce
3 tsp Ener-G Foods egg replacer
4 tbsp warm water
2 cups unbleached flour
2 tbsp sugar
1 tbsp baking powder
1 tsp salt
Directions
  1. 1. Combine egg replacer with warm water and stir until dissolved. Add remaining wet ingredients.

  2. 2. Combine dry ingredients in a separate bowl.

  3. 3. Gradually add wet ingredients to dry ingredients and mix until combined.

  4. 4. Pour about a quarter cup of batter onto each Belgian waffle baker square. Cook approximately 4 minutes.

  5. 5. Serve immediately or allow to cool and freeze for later use.
