This bread is a great snack or even a dessert. Serve with a 1/2 cup of frozen fat free yogurt for a wonderful dessert.
| 2 | cups shredded zucchini |
| 3 | eggs |
| 1 | cup splenda |
| 1 | banana |
| 1 | cup applesauce |
| 2 | cups whole wheat flour |
| 1/4 | tsp baking powder |
| 2 | tsp baking soda |
| 2 1/2 | tsp cinnamon |
| 1 | tsp salt |
| 2 | tsp vanilla |
| 1 | cup walnuts |
- Shred a medium zucchini. Squeeze in hands to remove excess liquid.
- In a large bowl mix the zucchini, eggs, splenda, mashed banana, vanilla, and applesauce. ( Stir by hand )
- In a second bowl stir the whole wheat flour, baking powder, baking soda, cinnamon, salt and chopped walnuts.
- Stir the dry ingredients into the zucchini mixture. Stir by hand.
- Spray 2 loaf pans. Pour 1/2 the batter into each pan.
- Bake at 350 for 55 to 65 mins.
