Rice would definitely be high GI. I think apples would be considered low GI
GI stands for Glycemic Index. it is the measure of how easy it is to absorb the carbohydrates into your body. Something with high GI is made of simple sugars and causes your blood sugar to spike opposed to something with a low GI which is made of more complex sugars and does not cause your blood sugar to spike so quickly/easily.

I recently looked into this by googling low glycemic index foods. Almost all vegetables are low gi except for potatoes and many fruits are too. Milk and dairy are generally low gi, the only thing you should watch is your grain and starchy vegetables.
