Low Sodium Blackened Chicken Recipe

Makes 4 servings


Nice Cajun flavor off the grill or on the george foreman. Serve with mashed potatoes and roasted vegetables.

Ingredients
400 grams chicken breast, 4 fillets
1 tbsp. unsalted butter, melted
5 teaspoons paprika
1 tsp. oregano
1 tsp. thyme
1 tsp. cayenne pepper
1/2 tsp. black pepper
1/2 tsp. white pepper
1/2 tsp. garlic powder
Directions
  1. Mix seasonings together in an airtight container. You will only use about 5 teaspoons of the seasoning mix.

  2. Trim excess fat from the chicken. Cut slashed through the skin about 1/2 inch deep to allow spices to penetrate the meat.

  3. Brush the chicken with melted butter, then rub the spices in. Rub the spices on one side of the chicken only for less kick.

  4. Cook on a medium grill for 10-20 minutes.
