tasty, and easy to change up, a easy clean up! Give it a shot - my "fatty food lover" fiancee loved it. He even passed up his Chicken parm to have some!
| 1 | tbsp Olive Oil |
| 2 | tbsp onion, Diced |
| 1 | clove Garlic, crushed |
| 1 | dash salt |
| 1 | dash pepper |
| 1 | tsp Basil, dried |
| 1/2 | tsp Parsley, Dried |
| 1/3 | lb. Chicken breast, trimmed of fat |
| 1 | med. Tomato, Diced |
| 2 | tbsp Parmesan Cheese, Grated |
| 6.63 | oz Linguine, Whole Wheat |
- Start a pan of water - add the pasta before the water boils (this helps "texture people" and the Wheat pasta become friends!)
- While the pasta is boiling, heat the oil in a medium sized skillet.
- Add to that, the Garlic and onions
- While the onions and garlic are cooking, get your chicken ready.. sprinkle each side with a small amount of salt and pepper (even Italian seasoning if you'd like)
- Then add the chicken to the skillet. Cook, until all sides are lightly browned, and the chicken is no longer pink.
- Add to this your tomato, and basil. Cover and let simmer for a few minutes, until the tomatoes are cooked to your liking.
- Drain and rinse pasta, and add to the skillet, add the parmesan and parsley- toss everything to mix well. Take the pan off heat and let sit a few minutes to allow the pasta to absorb flavor.
- All done! Sit and enjoy! Delicious, helps cure the craving for margarita pizza! :)~
