Lower Sodium Hearty Chicken and Rice Bowl Recipe
Same as my other hearty chicken and rice bowl except replacing the gravy with reduced low sodium beef broth. Not as yummy but lower calorie and lower sodium. Better for you. Make sure to reduce the broth down really well so to concentrate the flavor as much as possible.
| 1 | chicken breast, cubed |
| 3/4 | cup cramini mushrooms, rough chopped |
| 1/2 | cup chopped onion |
| 1 | carrot, sliced |
| 3 | T cilantro, chopped |
| 1 | cup cooked brown rice |
| 1 | cup low sodium beef broth |
| 1 | t olive oil |
| 1 | pinch dried oregano |
| 1/4 | t crushed red pepper flakes |
| 1 | salt and Pepper to taste |
