Lunch and Dinner Ideas?
I struggle seriously with lunch and dinner. I see all these breakfast help ideas but no lunch or dinner. I normally have about 20-30 minutes to make it. I have a oven, blender, convection oven, and microwave. Could ya'll give me some good healthy recipes. I need to gain about 20 pounds. Thanks.
You could make a calorie-dense sandwich thats filled with good nutrients.
Along with either bread, a bagel, turkish loaf, large pita or another carbohydrate you could have it with:
Protein - Roast beef, pastrami, salami, ham, chicken, full-fat tofu, whole eggs etc.
Cheese - Feta, cheddar, bocconcini, mozzarella, parmesan... any cheese! (except the low fat ones of course)
Spreads (a must have!!) - AVOCADO, butter, mayonnaise, olive oil, hummus, pesto, peanut butter, any creamy dressings
Veggies (not essential, but if you want some yummy ideas) - Olives, sun-dried capsicum/tomato, char-grilled veggies, coleslaw

You could make a delicious pot of chili!
4 cans of beans (or equivelant amount)
1 can of crushed tomatos
2 tbs olive oil
some tabasco sauce to taste
pepper, sage, whatever other spices you like
Actually you can throw in anything, meat (or tofu if you're a veggie), a couple vegetables (not too many though!), or whatever else you have in the fridgerator.
I highly recomend sprinkling some cheese on top of your bowl-full (so good!!!)
Just throw everything in a pot and cook it on the stove for a while.
Let's see, what else...
Pasta salad!
Make a pot of pasta...and mix it with different cheeses, meats(or marinated tofu), some dressing (or you could make you own pesto which is also fabulous), olives, etc...
Howabout a fall recipe?!
- 3 tbs olive oil
- 1 cup breadcrumbs
- sage and salt and pepper
- about 2 lb. sweet poatoes
- 4 cups thinly sliced onion
- 4 cups sliced apple
- preheat oven to 450 degrees.
- toss breadcrumbs with 1 tb olive oil
- saute the the onions with the rest of the oil, then stir in sage and season with a bit of salt and pepper
- arrange overlapping slices of sweet poato on the bottom of a 3 quart baking dish, season with spices, then arrange the slices of apple over that, and then the sweet poatoes again, and then the rest of the apple (seasoning each layer)
- cover the dish tighly with foil and stick into the oven for 45 to 55 minutes (or until the poatoes are tender)
- uncover dish ant then top with breadcrumbs and bake for another 15 mintutes or until the crumbs are browned.
Here are just a couple of my oodles of ideas.

I also like to make things I can stick in a tupperware and pull out for lunch/dinner. This includes pasta, pasta salad, chili, pulled bbq pork sandwhich meat, etc.
Something that might help you is investing a small slower cooker. I adore this baby. Stick some potatoes and meat in it in the morning, come home and eat. The best. You can make lots and lots of things in it, including stews, casseroles, roasts for sandwich meat or just to eat, chicken wings, anything! =) And there's usually left overs.
HI! when I'm stuck on campus all day what I do is make a BIG bowl of couscous salad on a sunday, keep it in the fridge, and put it into tupperware, drizzle with olive oil and take it with me when I need it, I generally end up putting in tomatoes, roasted peppers, onions, courgettes, chicken, just anything really!
