I'm always trying to think up healthy and tasty ideas for lunches I can bring to work. This is one I really like and thought I'd share.

In a large skillet type pan I cook copped onion, roasted red pepper and a little garlic. I add in 1 large can of kidney beans, drained, and 1 bag of spinich. I cook this up until the spinich is tender. I usually split this out for about 4 days worth of lunches and I crumble an ounce or two of reduced fat/low cal feta cheese on top right before I reheat. It's tasty and quick if you have a few extra minutes one evening to put it together.

I bet turkey would be good too if you're not a fan of beans!

Yummy Taco Salad: Prepare the night before

In tupperware bowl add:

1 Cup Taco Meat (use lean ground turkey only)

1 or 2 Tbl of reduced fat monterey jack cheese

In zip lock bag add:

1 Tble lettuce,

1 teas onions

1 hot sauce packet from taco bell.

(Optional additions: lime, peperocini's add great flavor, kidney beans and avocado are also yummy in this)

Cook: 

Heat  meat in microwave, then dump in your zip lock goodies. Squeeze in your lime and taco packet and Mmmmmmmmmmmmmmm. You have a 350 calorie lunch minus the avocado and kidney beans. :o)
