What did YOU have for lunch today?
Lunch is my favorite meal
I had 4oz grilled chicken breast, shredded with 1/2cup raw spinach and sundried tomato spread in a mini pita with a side of way too much watermelon! It was yummy though!
A bit of chocolate fudge, cherries, and fried tofu and salmon. Veggies to come later in the day! :)
Yesterday I had a Healthy Choice Margerita Cafe Steamer, and some 100 cal Kettle Corn. For snack, I had a nectarine and an orange.
Whole wheat spaghetti with olive oil, tomatoes, green onions, and low fat feta cheese; yum. :)
Today I went to PF Chang's with friends and had the Hot and Sour Soup, Shanghi Cucumbers, Something Asparagus and a cup of brown rice with soy sauce. It was really yummy!
I had the craziest, busiest day...so no time for much of a lunch!
6oz of light'n'fit yogurt & 8oz of skim milk...
Dinner was much more interesting ~ a BLT pita (hold the mayo) with (only 8,yea!) french fries...and yes, I do realize that this makes me a bit "off the mark" but I haven't had anything deep-fried in WEEKS...so I spoiled myself, lol, with just a taste. And all this, yet my intake was still below the bare minimum for the day, while burning much more than required.
Tomorrow is threatening homemade mac'n'cheese...so I will be sure to measure & have a salad to fill me up.
After swimming I had a HUGE salad with field greens, cucumber slices and cherry tomatoes, reduced fat aged white cheddar cheese and 4oz grilled chicken breast. Then I had some grapes and Kettle Corn, I am stuffed.
Oh yeah, and Asian Silk Salad Spritzers dressing, my new favorite!
I got bored... so I got creative :)
Whole wheat organic tortilla wrap with 3 slices of low sodium lunch meat (honey ham today) a smear of cheese whiz or something like it (a tsp maybe) another piece of lunch meat just because followed by strips of orange bell pepper and zucchini a handful of cole slaw veggies (no dressing) and a tsp of ranch dressing down the middle. Wrapped it up and brought it to work. Wasn't sure what to expect.... OH MY I must eat one each week now! Cole slaw veggies are crunchy and add a nice kick to it! About 300 calories for the whole deal!
I had extra slices of orange pepper and zucchini too on the side.
I also found a new snack today... the triscut crackers (any flavor but fire roasted tomato is wonderful) dipped in low fat cottage cheese instead of full fat cheeses.... I surprised myself with that one! I only ate 5 crackers but broke them each in half and only had 1/4 cup of cottage cheese. It was surprisingly yummy and a wonderful small meal option with veggies on the side.
Beef and vegetable rissole with beetroot, cucumber, tomato, onion, carrot, potato and green beans on the side.
Couscous mixed with chopped tomato, olive oil, and egg.

I had a delicious lunch...4 oz green seedless grapes, 1 cup fat-free cottage cheese, 1 thin slice of Italian bread w/ 1 tbsp of peanut butter...all for a grand total of 387 calories! ![]()
Today I took my lunch to work...it was yummy! Turkey chili with beans+black beans+corn+hot sauce. SF cherry jello and watermelon for dessert. I had fruit, but was too full....oh yeah, and a Diet Coke with Splenda...my 2nd one in 6 months or so.
Couscous with sundried tomatoes and steamed mixed vegetables :)

chicken, pasta, peppers, cucumber, tomato, beetroot mixed with salsa and spinach
apple, 1-2 oz deli turkey, 1 slice whole wheat bread & 1 dill pickle
Went out to Yo Sushi and had for a total of 460 calories:
edamame, 2 small tuna rolls, 2 small cucumber rolls, 2 pieces salmon nigiri, 1/2 pumpkin korroke, 1/2 serving of crunchy tofu, and one piece of tamago nigiri. With water and green tea.
I brought my lunch again...a roasted chicken breast, 1 cup of broccoli, a steamed sweet potato, nectarine and a sf jello. It was good, filled me up for a while...now for dinner???
Today I had a big plate of iceberg lettuce with a chopped-up plum tomato, a slice of fake chicken, sweet corn kernels and bread & butter pickles. It was yummmm :)
