What did you have for Lunch today...Veggie Style
Hey guys...sure this is been done already but just needed some lunch ideas so I thought this might be fun...
Today I had a Brown Rice Salad (courtesy of Vegetariangeek...thank you it was yummy!), Brown rice, black beans, corn, spring onions, some ff italian dressing and tabasco (love spicy)
How about you???
wow i now have sooo many new ideas from you all...
today will be my veggie sandwich, whole wheat bread (i'm so excited that we found frozen British bread here in FL), pepperjack cheese, romaine, cucumbers, onions and chili sauce
and some lentil soup

I love muesli- but not for breakfast...
so lunch today was muesli with non-fat yoghurt and fruit chopped in to it. As well as raw veggie sticks.
I make my muesli myself
3 cups rolled oats
1/2 cup each: sesame seeds, sunflower seeds, raisins, dried cranberries
1 cup dried apricots, chopped
1 cup mixed nuts, chopped(this batch I used 1/3 cup macadamia, 1/3 cashew, 1/3 almonds)
this is my base recipe... I store it in a glass airtight container. And add bits and bobs depending on my mood... like a tbs wheatgerm or bran... millet... pumpkin seeds... dried apples or cherries

Hey Kate... I have to leave early too... and have 45 min lunch break... so I usually prepare something the night before...
here are some suggestions:
- cook a bit extra to take
rice, pasta, veggies, ratatouille, grain or bean stew... they all keep really well and can be heated quickly and easily... there are masses of possibilities - make a veggie soup and take it in a flask-
ok- you have to heat it in the morning... but that's quick and it'll keep hot until lunchtime - prepare a lunchbox
with chopped veggies, dry wasa crackers and make some kind of dip (humus, cottage cheese, tomato salsa, yoghurt dip...) can all be done the night before - muesli
easy to pack...
I'm totally in love with this Tofu chili recipe from Whole Foods. I make a big pot on sunday (it only takes about 20 minutes to make) and eat throughout the week. Healthy, yummy, cheap and easy!
