What did you have for Lunch today...Veggie Style
Hey guys...sure this is been done already but just needed some lunch ideas so I thought this might be fun...
Today I had a Brown Rice Salad (courtesy of Vegetariangeek...thank you it was yummy!), Brown rice, black beans, corn, spring onions, some ff italian dressing and tabasco (love spicy)
How about you???

i just took a look at the recipes and that looks yummy! may have to try that out.
i love the chili at Natures Table, anyone with a recipe that taste similar??
I have been making tofu wraps
I use firm organic tofu,chopped celery, green onions,black olive, sweet pickles, mustard, light mayo, 1/8 tsp herbs de Provence, fresh ground pepper.
Rolled in a whole grain, low carb wrap. About 1/2 cup per serving.
Mix and store in refrigerator.
There are soem excellent recipes on here that im definately going to try!
I had a vegetable Chilli yesterday with a pitta bread
Todays going to be a clean out the fridge day,
so i'm having left over brown rice salad (added some feta to it), and lentil soup
having hummus and pita later...cant wait!

I love clean out fridge day! it's usually Fridays for me
... I end up eating the wierdest combinations...
So i didnt make any lunch today...woke up late =(
so its either going to be the lean cuisine-sante fe rice and beans, OR subway - veggie delite
i had leftover whole wheat rotini pasta with tomato sauce that i mixed in morningstar grillers crumbles..... nothing very exciting :P for breakfast i had a morningstar sausage patty with cheese on a mini whole wheat bagel.... that tends to be my typical breakfast.... lunch though... sometimes i bring an amy's meal... or i'll make brown rice with veggies and maybe morningstar chicken strips... obviously i'm doing a good job keeping morningstar in business! i like some of these other ideas... they sound healthy and "different"... i think i'll try some!!! thanks :)
Yesterday I drained and marinated some squares of tofu and button mushrooms in some low sodium soy sauce, fresh grated ginger, minced garlic, orange juice and a few red pepper flakes for about an hour...browned 2 minutes on each side and then used some marinade to saute some fresh baby spinach and served over some brown rice...It was delicious!!! and so easy to make and it made the whole house smell yummy! :)
Saturday I made some vegan pancakes with a little Bisquick, mashed banana, soymilk, walnuts and chocolate chips...Had the leftovers this morning in the microwave for 30 seconds...Yum!
today has been pretty bad (better than a bad weekend though)
we went to Earls sandwich in Downtown Disney and I had the Caprese Sandwich, which i'm sure was a million and one calories. oh well
