What did you have for Lunch today...Veggie Style

Hey guys...sure this is been done already but just needed some lunch ideas so I thought this might be fun...

 Today I had a Brown Rice Salad (courtesy of Vegetariangeek...thank you it was yummy!), Brown rice, black beans, corn, spring onions, some ff italian dressing and tabasco (love spicy)

 How about you???

I had a roasted zucchini stuffed with chopped onion, garlic, seasoning and edam cheese, drizzled with olive oil with Salad and two squares of toasted home made bread drizzled with olive oil and garlic.

To stuff the zucchini, cut it in half then scrape out some of the soft insides and then fill it with the filling and cook in the oven until soft and the cheese is golden (takes about 30-40 minutes to get a really nice soft zucchini)

i had half a greek salad from Panera, i guess i wasn't hungry from the bagel and bearclaw i had earlier =(

another bad day.

oh well tomm's lunch...i'm making now...will be a chutney (made from corriander, green pepper, chilis, salt, and a few peanuts all blended together), lettuce, cucumber and onion sandwich

and maybe some fruit to go with it. 

I'm going to be having (once it's lunch time) instant miso soup with cabbage, spring onions and tofu pieces :D looking forward to it!

I had boring lunch today..let just say that our school isn't very vegan friendly..

Mixed salad with, a little black olives, lettuce, tomatoes, kidney beans, cucumber, tiny bit psta

a huge salad with olives, banana peppers, too many jalapenos [my mouth was on fire] then i had a pear and an mini veggie [msg free] eggroll

wow...that actually kind of looks like a lot
Went to Chipotle for a Burrito Bowl (no tortilla) of rice, black beans, tomatoes, guacamole, corn, lettuce, and the medium green salsa.... yummmmmyy

Two slices of homemade mixed grain bread. One with salmon and a lil lemon juice ontop, the other with low-fat cheese, avocado and shaved ham ontop.

YUM.

bread makers are so handy!

Tomorrow: Banana Bread =]

Tomorrow i imagin it will be Lentil loaf and salaf (i'm gonna try making a lentil loaf tonight so it'll be pre-made for lunch tomorrow!).

i love subway and chipotle! 

 today is a cheat day....going to have a lean cuisine Sante Fe Rice and Beans, and some cantaloupe.

Today was stif-fry day at work today, they bust out the woks and make them to order. I had mixed veggies (green and red peppers, broccoli, cabbage, green beans etc.) over some rice noodles with a little peanut sauce and garlic...So very good!!!
I made a delicious lentil loaf last night (like a meat loaf substitute) so i'm having some for lunch today with a salad :)
A wedge of laughing cow cheese lite spread over 3 flatbread whole grain crackers, a yellow bell pepper sliced up, c cup of tomato basil pasta soup, lots of water to drink.  Total calories was 330.
I had a handful of cashews, an apple, and black-eyed pea and potato soup. It was a new little combo I tried that I'll definately be making again. :)
I had black bean spagetti sauce with noodles.  It was yummy.
Today I had a delicious spinach salad complete with tomato, cheese (I do eat dairy),  French's brand  Fried Onions, and Italian Vinagrette. Yum!
I had a great Salad today!
It was as followed:

2/3 cup of baby spinach (raw)
1/2 cup of chopped tomato
1/2 cup of chopped cucumber
2 tablespoons of crumbled feta (obviously not a Vegan)
1 tablespoon of chopped red capsicum
1 vegetarian sausage, sliced and quick pan fried with a bit of olive oil to prevent sticking

No dressings required!!
The red peppers are sooo nice in it and theres so much flavour theres just no need for a dressing!
May be a bit high on the fat/cal side (i haven't analysed the calories in it yet) but it was so very yummy.
I had it as a main meal for lunch.
amys refried beans with tofu cubes over it. for dessert i took some apples and 'friend' them in cinnamon and fake butter.

my boss'es b'day so lunch is Macaroni grill!!!  save mee!!!!! haha
