Does anyone have a macaroni and cheese makeover recipe?
You can reduce the fat content by using low-fat dairy products and increase the fibre content by using wholewheat pasta. Strongly flavoured cheese goes further than milder flavoured cheese. However, the best way to keep the calories down it to serve it in very small portions accompanied by a big green salad!

I like to mix in broccoli or asparagus to make the portion bigger and healthier. I'll typically add about 150 g veg. for every 60 g pasta (dry weight; 60 g = one 2 oz. serving).
I like the orange stuff in the box. What can I say - it's comfort food. Usually I'll use LF sour cream or greek yogurt in place of the milk and Smart Balance buttery spread in place of the butter. Makes it very creamy and delicious. I like to mix tuna and peas in as well - it's the best thing ever.
