So I had a problem. I wanted something that tasted like Dosa Mosala, but I didn't have potatoes or Dosas (I am too lazy to make those from scratch). What I did have are some Garam Masala powder and ground cumin. I also had some Jalapeno and Pepper Jack chicken sausages that needed to be cooked soon, and Steel Cut oats.... I also didn't have the chilies and mustard seeds so I improvised on spices.

This makes 4 servings around 400 calories (will vary with different tortilla).

Ingredients:

  • 160 grams (1 cup) of Steel Cut Oats
  • 4 Amylu chicken sausages
  • 4 LaTortilla Factory Low Carb, High fiber (I like how they taste ok?)
  • 1 cup or so of sliced mushrooms (I just cut up what Muselli mushrooms I had and two medium portobelo mushrooms)
  • 1/2 diced onion
  • Garam Masala powder
  • Cumin
  • Grounded black pepper
  • 1 or 2 teaspoon of oil

Directions:

Bring 2 cups of water to boil and add the oatmeal. Reduce heat and once it starts to thicken reduce to simmer. Don't forget to steer so it won't burn at the bottom. Cook until most of the water is gone. Towards the end add ground pepper to taste.

While that is simmering away bring water to boil and cook the sausages. Ones I have are already pre-cooked so about 5 minutes is enough.

Heat a skillet, and once it is hot add the oil and wipe it with a paper towel so the pan is nice and lubricated. Add the onions and mushrooms, and a pinch of Kosher sea salt. Let it cook for a minute or two then add a tea spoon of Garam Masala and a tea spoon of cumin. I use a splash or two of chicken stock to keep it from burning. Once that is done take it off the heat.

When oatmeal is almost done, pretty much all the water is gone, add the sauteed mushrooms and onions, and mix everything together. Might want to add more **** to taste. Split in to 4 servings and cut up the sausages (one per serving), wrap up in a tortilla and enjoy. Smile
