I made a delicious chocolate cherry snack cake yesterday!

I got the recipe from About.com and just tweaked it to suit my needs.

1 box of reduced sugar chocolate cake mix

1 can of no sugar added cherry pie filling

2 eggs or egg sub

1 t almond extract.

Mix until blended and then for 1 minute longer. Preheat oven to 350 and bake for 25-30 minutes.

The original recipe called for a cooked chocolate frosting but one of the reviews said that it was just a melted candy bar and their family scrapped it off and ate only the cake.  I don't really care for the reduced sugar frosting so I just did it as a snack cake.  I would have had cool whip but we were out.  It was very delicious!

If you have to have icing you could use nsa pudding as a substitue too.  I might try that next time!

I've made this before only added some mini choc chips to the batter and didn't use any icing.  Top it with lite cool whip if you like.  It is very moist and fudgy.  delicious
