I made the "muffin in a mug"

I got the recipe from here on CC. I thought it was totally cool to make a muffin in a mug. It always sucks to make a whole muffin pan of muffins because we all know what happens then!
So I made it last night and here is my review:
The texture was kind of spongy and unappealing. Not a whole lot in the way of taste, either, though I think I could screw with the recipe somewhat and not up the calories too much, and make it yummier, maybe by adding some canned peaches or canned mandarin oranges..
The good thing about it is that it was cheap and simple to make, takes like 2 minutes, it's the perfect serving size for 1 person, and it is very filling.So IMO, it's not yummy but it is convenient and efficient. Can't say I'd recommend. LOL
One thing that was interesting is that the nutritional when you click on it said 255 calories, but when I put the ingredients in the calorie calculator, it came to much less-- one-hundred-something. I don't know how you can mess up calculating when you are only making the one serving and it has very very few and very basic ingredients. Go figure.
That's a really clever idea! One serving muffins....very nice. It sucks that they don't taste good! I bet it would be good with some blueberries...I bet it's the flax meal making it taste gross though...
Stupid calorie calculating folks...gah. They do things like that simply to torture me.
Turns out I was wrong about it being cheap, too.. Jimmy (my bf) said that I shouldn't get too comfy with flax meal. I asked why, and he said that for a really really small bag it is around $8. I didn't know that because I have never bought flax meal myself. We just had some in the pantry from LAST time i was dieting when Jimmy made me some 1 carb per slice bread.
It's so much easier to eat junk on a budget than it is to eat healthy! I like to buy organic foods, and they're so much more expensive. You'd think they'd be cheaper because the farmer doesn't have to buy all those nasty chemicals!
