I've been making pizza and bread dough for years and the only sugar I've ever put in it is a quarter teaspoon disolved in warm water to proof the yeast and get it going. Just leave out the sugar. It does need some salt however.
Ever try proccuitto for the meat? It's paper thin and full of flavor for very few calories. I like it instead of pepperoni. I also use a, brace yourselves, pureed head of boiled cauliflower as my white sauce base. To it I add lots of garlic, basil, black pepper and a touch of hot sauce. For toppings, load with fresh veggies, procuitto or grilled chicken pieces, and low fat mozz cheese! It's yummy
1/3 of a frozen California Pizza Kitchen thin crust Margherita pizza is around 300 calories. Not too shabby for pizza!
I like to use Focaccia Bread as the base sometimes. The Focaccia from St. Louis Bread Co. (AKA Panera) is 150 cals a serving. Add toppings ( chunky spaghetti sauce w/ mushrooms and tomoatoes and skim mozzarella cheese) and bake till cheese is melty or toppings look done.
After hurricane Charlie when there was no power in FL, my dad used Tortillas as a base for a thin crust pie too, he stacked 2 or 3 together and brushed some butter/margerine/olive oil/etc. between them to get them to stick together then add toppings and cook it on a pizza stone on a Weber BBQ grill. After not having any power for 5 days mom said it was the best pizza she ever had.
That the great thing about pizza, there really isnt a "wrong" way to make it. Even in Italy, it varies from town to town depending on local tastes and the available local ingredients.

I've also used eggplant slices as the base for individual pizzas. Yummy yummy!
Get a flour tortilla (low-cal or whole wheat like posted above, if you prefer) and cook on a grill or in a toaster oven until crispy. Add tomato paste or diced tomatoes, add your cheese, and plop on the veggies to cook.
On the news, I saw a guy make a pizza with a flour tortilla on a grill with barbeque sauce, white meat chicken bits (optional) a bit of cheese, and veggies such as tomatoes, peppers, onions, and mushrooms. It looked so good, I could just imagine the flavor of a smoky pizza.. mm!

Eggplant Pizziaola - Pizza style eggplant - it's not a pizza, but it tastes like one!
Boboli is a brand of already cooked pizza crust, available usually hanging in the deli or produce dept. of the grocery stores.
I make a homemade crust with 3 1/2 cups 100 percent whole wheat flour, 2 pkg of yeast, 1 1/2 cup warm water and 1 tsp of salt, and 1 tbs. olive oil. This will make three thin round crusts.
The pizza sauce is one small can of tomato sauce and 1 small can of tomato paste with several cloves of fresh crushed garlic and some basil and oregano with just a sprinkle of crushed red chili peppers. Heat together in small saucepan.
Top with any vegy's (mushrooms, spinach, zucchini, asparagus, red onion, banana peppers, artichoke hearts) and either a mixture of non fat cottage cheese and nonfat feta cheese, or just reduced fat mozzarella.
Bake for 10 minutes at 450, til slightly browned and melted.
Yum!

Veggies and sauce - no meat, no cheese.
What I do is take a low cal tortilla (50 calories + high fiber).
Get my favorite tomato sauce, some cheese and mushrooms. Bake in the oven for a few minutes.
Not the same as the real thing, but I have a whole pizza for under a 100 calories.

I've never seen those low cal tortillas everyone is talking about. I live near Sudbury Ontario. I'll keep looking but have'nt found them yet. But they would work. 100 calories for the whole pizza....awesome. Thanks tanya
I prefer mine without tomato sauce. My favorite is one with Carmeli-ed (a certain key on my keyboard is not working, excuse the misspelling) Onions & Feta, which I accidentally discovered after making dough without first checking on the vegetable situation in my house.
Use 1/4 whole wheat pi--a dough recipe (I use the one from the Silver Palate cookbook) and make as large & thin a pi--a as possible, set it on a cookie sheet with a fair sprinkling of corn meal on it. Thinly slice one onion and saute it in1/2 tablespoon of oil until it is soft and sweet and carmel colored. When cooked put the onion on the pi--a dough and crumble 1 ounce of feta over the top (you could use non-fat feta to lower the calories, but I prefer the regular for flavor). Brush a tidge of olive oil around the edges. Cook it in 500 degree oven for 10-12 minutes. Add salt and pepper at the table to taste.
I eat 1/2 of the pi--a with a large salad. 1/2 the pi--a is 282 calories, with 12g fat
