You could make this sugar free by using Splenda

Pudding Mix
3 cups nonfat dry milk
4 cups sugar
1/2 teaspoon nutmeg
1 teaspoon salt
3 cups cornstarch
(1/2 teaspoon vanilla extract to be added when you make the pudding)

Mix all except the vanilla, and store in an airtight container.

To prepare, mix 1/2 cup of mix to 2 cups milk. Heat and stir constantly while boiling. Cool, then add 1/2 tsp. vanilla extract.

Chocolate Pudding Mix
2 1/2 cups nonfat dry milk
5 cups sugar
3 cups cornstarch
1 teaspoon salt
2 1/2 cups unsweetened cocoa


Mix and store in airtight container.

To prepare, add 2/3 cup mix to 2 cups milk. Heat and stir constantly while boiling. Cool, then serve.

Humm...just wondering....If I added a little bit of non-fat creamcheese to this would it still thicken and taste like that cheesecake flavored pudding that abcsmom uses in her cheesecake recipe? 
I think it would work if you beat the soft creamcheese into it after it's thickened and cooled just slightly.  If you try to cook the creamcheese into it, it might separate or curdle.
Good idea.  Thanks.  I'm going to try it.  Maybe it will replace that fattening version of cheesecake that I crave so often.
