Scrapple is a Philadelphia and Lancaster County, country breakfast meat.  This version is healthier and much more appealing than anything you buy.  It's made with cornmeal and pork scraps, but this version uses lean pork shoulder and polenta.

Thanks for the link.  I will have to try that version.  Growing up we had a similar dish that was of German descent (I think) that used pork and oatmeal was chilled then fried. Delicious.
