A friend of mine wants to make Lemoncello and use simple syrup made with Splenda rather than sugar. I'm a little doubtful it will do well with the alcohol, given the chemical that Splenda is - not that I'm a chemist. Would it work and is there any danger to using Splenda in liquor?
You can safely mix liquor with SPLENDA® No Calorie Sweetener, but I'm not sure about making simple syrup. Simple syrup is 1 part sugar and 1 part water, brought to a boil, stirred until dissolved, and cooled for later use. But Splenda crystals dissolve easily in water without the need for heat, and so, for that reason, Splenda is usually added directly to cold liquids. You could make a simple syrup in the usual way with SPLENDA® Sugar Blend, a 50/50 mix of sugar and SPLENDA. The syrup won’t be as thick, but it will be as sweet.
