Makin a food healthy that's...not... (CHORIZO!)
Hi yall,
I love chorizo and bought some yesterday--today I look it up and see that one servinghas 20% of the fat I need in one day--needless to say, I am sad!
So I am trying to figure out how to make Chorizo and eggs and a flour tortilla and somehow make it...healthy....
somehow...
Any suggestions? Throw in veggies? (ure not really supposed to)

I have seen veggie chorizo, I can't remember the brand, but look for it in the frozen section. I'm sure it won't be the same but typically the texture is pretty good and the spices are the important part.
What about using egg whites only or one yolk and the rest whites?
I also think sauteed peppers and onions would be good with that and maybe some fresh salsa with lots of cilantro? MMmmm

man that does sound good! It was delicious today, and I think you're right about the egg whites--but then how is it yellow? Well whatever. Tomorrow I'm going to do chorizo for "seasoning only" (mean use sparingly) and load this baby with onions and bellpeppers sauteed.

hmm chorizo con huevos LOL ok yeah I eat it with the whole wheat tortillas and when I cook beans I just cook a little bit and add them to the beans.. OMG its soo gooood
The soy chorizo is in the veggie section with the tofu and wonton wrappers usually (ie:wal mart) :) But at whole foods they have it in the soy meat section next to the dairy. It is SUPER YUMMY and really teasted much like real chorizo!
I woould use egg beaters, low carb tortillas (higher in fiber and less calories than whole wheat), fat free cheddar cheese and soy chorizo. Sure thow in some grilled zuchini and maybe some salsa on top :)

One thing you can do is make a veggie soup with chorizo. Then chill the soup overnight, and remove the fat that floats to the surface and solidifies.

Have half a serving. Chorizo has enough flavor so less will taste like more.
Yeah that's the other thing--when you get the 'real' stuff from a carneceria there's no nutritional labels!
Soyrizo is AMAZING. A bit messy to cook with, but totally worth it.
