I have never been on a diet before, and usually eat whatever I want. My main problem is that i'm a picky eater, so I find it hard to find healthy foods I like. I love fruit (except pears), but my main problem is veggies. I usually don't like them unless they've been covered in flour and fried (can u tell I'm from the south?). Anyone know any healthy ways to spice up veggies?

i used to hate veggies and now i love a whole lot of them.... you just have to keep trying different ones in different ways.
i like to steam a random variety of veggies and put them in a pesto sauce (one of those packets you buy and just add water and oil), or i'll put some cheese on them.... not enough to kill the health but enough to make it taste good.
i also like raw veggies dipped in hummus, some veggies with peanut butter, or a cheese fondue with a bunch of veggies....
if i'm making sauce, salsa, chili, whatever i try to just toss in whatever extra veggies i can.
I've stumbled onto something wonderful! Honestly I would eat this even if I wasn't on a diet. Since starting south beach diet, I have had to get creative with veggies. This is my personal heaven.
Spray pam on a baking sheet, preheat oven to 400
slice a zucchini, place on baking sheet. I spray them lightly with I cant believe its not butter spray, and sprinkle with salt pepper and garlic powder. After 10 mins, I flip them, cook another 10.
They are so delicious! I do this with fresh string beans too! Yum. I think everyone finds veggies that work for them, and the more you eat them the more creative you get.
I found something kind of by accident at lunch today that was really good, but then again I love veggies anyway.
I brought in some broccoli that I had lightly steamed, and I was planning on putting a little cheese on it, but then I thought of the Light Asian Sesame dressing I had in the fridge, so I heated up the broccoli and tossed it in a little of the dressing instead. It turned out really yummy. I like Asian flavors like soy and teriyaki, but those have ungodly amounts of sodium.
- Roasted veggies are great - slice em up and put on a cookie sheet... spray with some olive oil Pam and sprinkle with a bit of salt and pepper. Then cook at 400 degrees until they are done (how long depends on what vegetable).
- Zip n steam bags by Ziploc for the microwave - you put in sliced up veggies with a little seasoning (I also add a spray of Parkay butter spray - 0 fat, 0 calories!) and nuke em, they are soooo good!
- Saute on the stove top in a little bit of broth or wine and use lots of seasoning. Some of my faves include cilantro and basil (fresh of course)
- Stir fry in oil, then when they are tender, add a little low sodium soy sauce
- Eat em raw - dipped in salsa, hummus, or make your own low cal dip!
- Spinach is very healthy - I try to add it to every casserole, every time I make rice, or eggs, salad, etc.
I will try my best here....I love every single vegatable out there...wow you don't see that often huh?
What I usually do, is steam my veggies in the microwave in a glass caserole bowl with a lid...i put the raw veggies in with a little water at the bottom of the bowl...I microwave for about 5 mins (depending on the veggie) and then when they are cooked...I drain out the excess water....from there I usually toss them with garlic salt and olive oil...yummy...also, i have this really good spice mix at home called yikes which has like 26 different herbs and spices in it...it taste good mixed in with almost all veggies...especially broccoli....

try cauliflower for example...cut it up, put it in a baking pan with salt, better and a a little bit of olive oil and roast it in the oven on 350 for about 30 minutes

or try sauteeing them in a dash of olive oil and adding a couple spoons of parmesan cheese.
or better yet.. hide them! I put finely chopped green peppers, onion, celery, shredded carrot, and mushrooms into a pasta sauce, makes it taste much better than the plain canned stuff anyways. or try stuffing chicken breasts with broccoli and low fat cheese, and eat sweet potatoes instead of white to get more benefits.
