I live on this during field tomato season!
| 2 | large beefsteak tomatoes |
| 1/2 | red onion |
| 1/4 | cup olive oil |
| 1/4 | cup balsamic vinegar |
| 2 | cloves garlic |
| 1/2 | cup black olives |
| 100 | grams feta cheese |
| 1/4 | cup fresh basil |
| 1 | tsp oregano |
| 1/2 | tsp thyme |
- Chop tomatoes and onion and put in bowl.
- Mince garlic and basil leaves and add to bowl along with kalamari olives and cubed light feta cheese.
- Mix oil and vinegar, add oregano and thyme, and toss all with tomato mixture.
- Chill.
- Makes a great salad or can be served with warm rice or pasta for a meal.
