Mashed Cauliflower (like Mashed Potatoes)

Who has a good recipe for Mashed Cauliflower?  How do you make it?  What is it like?

Just cook your cauliflower until it's soft and mash just like potatoes.  The only extra calories you'll add will be the milk and/or butter if you decide to use some.  Tastes good with just some Mrs. Dash.

I go one step farther and put the soft cooked cauliflower through the food processor to get it really smooth and fluffy.  It's very yummy if you blend in some mashed roasted garlic cloves. 

Made it tonight and it was great! I had never made it before, all I did was make it like I make my mashed potatoes except I added parm. cheese and baked it a little to keep it hot while I finished cooking. It was AMAZING

 bowman, so you cook it and then bake it? when do you add the milk ? do you add hot milk? I really like this and want to give it a try.

I cooked it and then just mashed it with butter VERY little milk!!!! and salt and pepper and a wedge of laughing cow cheese. Then I put it in a baking dish and covered it with parm. cheese baked it for 10 minutes while I finished cooking. It is amazing!

My fiance made it with millet and that seemed to work, but I don't know the recipe.

Amethystgirl, I think a dish like this with millet is awesome.

Does it TASTE like cauliflower?  I'm not big on veggies, so I always try to figure out ways to "sneak" them in, lol.

I just want to thank Bowman for her baking idea.  I did it today and I added milk.it was very delicious. Thank you so much.

 It's cauliflower, so, yeah, it tastes like cauliflower.  BUT - it's very mild and sweet when cooked very soft, drained dry and mashed.  Try it.  You'll like it.  If you don't want to do a whole head, get a package of frozen and use that the first time. 

I'm making mine today....I will report back!   I love cauliflower....so I doubt it is a hard strength for me.

OK--  Just made the mash!  I like it but you have to like cauliflower to enjoy it.  I mashed it with little cream cheese (less fat and cal than butter) little milk, salt, pepper, garlic and parmesan cheese. Took the suggestion of someone and put it into a flat low pan, and baked it for quite a while, put a little more Parmesan on top and dished it out.  I like it....and it a new way to eat a veggie.  I see adding onion or broccoli would be interesting as well.

I am totally going to try bowmans recipe tonight! can I microwave the cauli. or does it matter?

ok ladies, here is an idea.

I put some almond meal on top of it. it was all crunchy and yummy and yes lots of protein and healthy fats.

I enjoyed it.

I've actually used it as a sort of alfredo sauce.  I cook about 1 cup of cauliflower and some garlic with a shallow pan of water until almost tender, add milk to cook a little longer, and then add about an oz of cheese and cook for about 10 seconds, and then blend all of it together to pour over my spaghetti.  Texture not quite the same, but the cheesy taste is there, and it's a lot more filling than the original!

Tried it last night.

Microwaved with water for about 10 min (5min intervals)

Added garlic powder, salt and pepper

mashed 'em up

put them in the oven

and they tasted great!

 

One suggestion: I bought them frozen and I won't do that again.  To many stems and not enough flower.  Next time all try all this again with mostly flower.

 

I did half potatoes and half cauliflower to mask the taste for my boyfriend - I boiled a few cloves of garlic with the potatoes and mashed those in as well.  Really good.

 I didnt' run into that problem.  But I did buy a more expensive brand because it was on sale (Hanover, if I remember correctly) and I did it in the food processor, not mashed by hand.  Fresh is always better though!
