Great idea!  Why didn't I think of that?  My long mashed potato abstinance is about to end.
I use fat Free Creamer- only 12 calories per TBSP...
Indeed...the flavor is great. You can also toss in a big onion (and maybe a clove of garlic if you like) when you are boiling the potatoes and then mash it up with the potatoes.
Or roasted garlic!  Excuse me, I have to go boil some potatoes!

I just made these for dinner after reading this on the site earlier today and didn't tell my family that there was no milk/butter in them as I usually made them and they just LOVED them without even knowing how much more healthier they were!!

Thanks for sharing this!
I made this into a recipe.. Servings 4 - using only 2 large potatoes and the calories were higher.. 139 for 1/4 or batch.

I usually mash up a sweet potato......sounds like the broth may work with this too!  Thanks for the tip.
Not sure if this is in here anywhere yet, but on the South Beach diet they have a recioe for mashed potatoes that doesn't involve potatoes, but tastes pretty good, because steamed cauliflower doesn't have a whole lot of taste anyways.

Steam some cauliflower, once cooked, mash it well or blend it in a food processor to get out any "lumps" with a little liquid butter substitute. "I Can't Believe It's Not Butter" is a good option, but I prefer the becel spray topping. Salt and pepper to taste. You can add some garlic or minced onion to give it a little hint of flavour too.
There's a thread here on the Recipes Forum about mashed cauliflower.  Let me try to dig it out for you.
Another way to cut the calories in mashed potatoes is to add Cooked Turnips and mash them along with the potatoes,  no more than half and half.
