Mashed Potatoes Substitute
I found this on AOL while checking my mail this afternoon and thought this was REALLY cool! Has anyone tried it?
"Steam some fresh or frozen cauliflower in the microwave. Then spray the cauliflower with butter substitute, add a little nonfat half-and-half substitute, and puree in a food processor or blender.
'Salt and pepper to taste and you've got something that quite honestly can compete with the real thing any day,' says Dr. Agatston.
To make it even better, try adding roasted garlic, cheese, or sour cream to the mixture."
I have made it, just with a tiny bit of real butter and a dash of skim milk and some spices. It's good so long as you don't expect it to taste exactly like mashed potatoes.
I've seen this before, but never tried it. I think I'd rather just eat a plain baked potato. =/
My family eats this a lot. I add just a small amount of olive oil and fat free sour cream, salt pepper. I then bake it again for about 30 minutes, so it's kind of au gratin. Yum and it fits the bill for texture
I like it mashed with salt, pepper, a little skim milk and then I sprinkle some fresh grated parmesean cheese over the top - yummy! I've even sprinkled a little italian bread crumbs on the top with the parm and stuck it under the broiler to brown the top and make it all crispy - really yummy! I'm thinking I came across the mashed cauli recipe in my South Beach Diet book . . . although I'm sure I have tweaked the original recipe.
don't get me wrong, i LOVE potatoes. haha. my family actually calls me the spud queen :-P
I'm just not eating enough vegetables and i love cauliflower.
i'm totally excited to buy cauliflower next time i go to the grocery store and try this!
I also read about using half steamed cauliflower in potato salad, to bring the nutritional value up and not totally lose the opportunity to eat potato salad.
I have a friend who eats piles of mashed cauliflower and he said other than it takes a lot of work to get it to a nice texture, he thinks it's an awesome substitute.

Boiled potatoes with two or three garlic cloves and steamed the cauliflower. I used an immersion blender to puree the cauliflower with the boiled garlic, then added it to the boiled potatoes with butter and 2% milk, salt and pepper. Not as healthy as straight cauliflower, but healthier than straight up potatoes.
Boyfriend was clueless - had seconds and said he loved the potatoes. I think the garlic really helped to mask any possible cauliflower flavor.
Good idea - kellywood! I used to make the mashed cauliflower all the time with I was low-carbing it, but the 1/2 and 1/2 with potatoes and garlic sounds yummy and my kids might even eat it. I used to make 1 dish of mashed potatoes and 1 of the cauliflower for me but this would be a lot easier and better for everyone.
