Recipe Ingredients for Massaman Curry

3 tbsp olive oil
1 clove garlic
1 tsp lemon
1 tsp ginger
2 tsp red curry paste
16 oz chicken broth
2 tbsp fish sauce
2 tbsp soy sauce
1 tbsp sugar
13 oz coconut milk
12 oz chicken breast
2 tbsp lime juice
1/2 cup unsalted cashews
2 tbsp cilantro
2 medium carrots
2 medium potatoes

Recipe Directions for Massaman Curry

  1. Slice potatoes and carrots, boil in pot until tender - about 10 minutes.

  2. Heat oil in large saucepan over medium heat. Ad chicken and cook for 5-6 minutes. Stir in garlic, lemon and ginger - cook for 30-60 seconds, add curry and cook 30 seconds more. Pour in 1/2 cup of chicken broth and stir until the curry paste has dissolved, then pour in remaining chicken stock along with the soy sauce and sugar. Bring to a boil, then reduce heat to medium-low, partially cover, and simmer 20 mintues.

  3. Stir in coconut milk, lime, cliantro, and cashews, potatoes and carrots and heat through to a slow boil.

  4. Serve over Jasmine rice and garnish with green onion (optional).
