Matt's Potato Soup Recipe

Makes 6 servings


Cheesy Potato Soup

Ingredients
2 large potatoes, diced
1/2 cup milk
2 cans (24 oz) chicken broth
5 slices (95 g) american cheese
1/4 onion, diced
2 tbsp flour
Directions
  1. In medium sized pot, add potatoes, onion, and chicken broth (add water to cover potatoes if needed).

  2. Bring to a boil.

  3. Mix together milk and flour until flour is disolved. Add flour/milk mix to potatoes.

  4. Simmer over medium heat as soup thickens for 20 minutes.

  5. Add cheese slices to potatoes one at a time while stirring and allowing cheese to melt.

  6. Simmer over low heat for 5 minutes.

  7. Serve with bacon bits and shredded cheese if desired.
