I've never made meat loaf in my life, but I've had a craving for good, hearty home made meat loaf. Does any one have any good recipes?
Kraftfoods.com is a good resource to search for healthy recipes. You can search for meatloaf and it will give you many different recipe options that you can choose from that might sound good to you. It also gives you the nutritional facts for the recipe.
I find the best way to make meatloaf (learned from my Italian family) is with a combination of ground beef, pork and veal. I think the best place to find actual recipes is foodnetwork.com, but I also like recipezaar.com.
What I do is saute some finely chopped onion, garlic, celery and carrots in olive oil until cooked, then chop them finer in the food processor (if you like) and mix them into your ground meat with 1 egg, a couple handfuls of bread crumbs, 1 cup of sour cream, 1/2c ketchup, and some salt/pepper, 1 tsp. ground sage. Form it into a loaf shape on a sheet pan and bake at 350 for 1- 1/2 hrs (until done). I sometimes make a quick mushroom wine sauce to serve with it and roasted garlic mashed potatos.
