A light and somewhat unconventional tuna salad that I created and really loved. Great in a wrap with some lettuce. I'm sure it would be good on a sandwich too.
Recipe Ingredients for Mediterranean Tuna Salad
| 5 | oz light tuna |
| 3 | oz diced tomatoes |
| 0.08 | avocado |
| 1 | tsp extra virgin olive oil |
| 1 | oz reduced fat feta cheese |
Recipe Directions for Mediterranean Tuna Salad
- Drain tuna, put in a bowl
- Add a 1/2 to 1 Tbsp of the liquid that the tomatoes were packed in and then add 2 or 3 Tbsp of diced tomatoes
- Add about a tsp EVO and 1/8 or 1/10 of an avocado, diced
- Further crumble feta cheese when adding
- Mix all together, being gentle as to keep the avocado in pieces and not mashed
- Season with adobo or salt and pepper, or garlic powder...whatever suits your taste
- The flavors blend nicely overnight but this isn't necessary
