Medium Egg White

I noticed this site doesn't give the option of choosing medium when it comes to egg whites. (Also the egg package at home doesn't say.) How many grams does a medium egg white have? A large whole egg=50 grams, medium whole egg=44, large egg white=33... I can't find or figure out what a medium egg white in grams is.

the differences are negligible...if you think about it..the large one has 17...so even if the medium one was 13-14 would it really make a difference? log it as the large, that's what i do.

33 is to 50 as 29 is to 44  If that is true, then log 29 grams for a medium.  I record 16 calories for a large egg white and 13 for a medium one. 

By the way, I have tried several methods of getting the egg white separated from the yolk. 

1) I make a crack somewhere on the egg shell around the half mark, crack open the two parts, and pass the yolk back and forth and using a side of one of the two parts to help cut the egg white loose of the yolk. Sometimes using this method the yolks breaks up and some of it drops into the egg whites.

2) Lately, I have gone to just cracking open the egg and dropping the whole egg into a bowl. Once I have my 4-6 eggs in the bowl, then I take the yolks out using my fingers and making sure I get as much of the egg white off as I can. 

In either case, I don't get all of the egg white into the bowl since some ends up on my fingers no matter what method I try.

Note:  Many people say eat the whole egg and don't waste the yolk.  They may very well be correct, but I continue to eat egg whites and only on occasion do I eat the whole egg.

I am one of those people who does whole eggs.  The only time I made myself an egg white omelet was when we had a bowl of egg whites left from when we made a recipe that only required yolks.  They would have spoiled had I not eaten them.  Let me tell you, it felt thin...no body.

Pilgrim, if you only eat the whites, why don't you buy just egg whites? And what do you do with the yolks - toss 'em?

 

I guess I like getting my egg white fresh instead of buying them in bulk.  Also, our small-town grocery store does not sell egg whites or even Egg Beaters.  Yes, I keep them in a jar in the refrigerator and hide them, since they gross my wife out.  When the jar is full, I throw it away.  I don't put them in the sink, because sometimes they harden too quickly.  I do occasionally eat the whole egg and use an whole egg in baking.  However, for several months I have been eating egg whites where I cook 4-6 egg whites in extra virgin olive oil, add some black pepper and granulated garlic--and occasionally add lean bacon bits and/or Kraft's nonfat cheddar cheese.  Sometimes I put the cooked "omelet" on a slice of low calorie whole wheat bread. 

In any case, I love my cooked egg whites, and I have used them in baking, such as replacing one whole egg with 3 egg whites.  But I have to admit, I have been wavering about the eggs.  I will say that I have found some recent comments by medical doctors who still recommend no more than 3 whole eggs a week.  And for people with high cholesterol, I have found doctors' comments that suggest only egg whites be eaten. 

Hey Pilgrim, may I make a suggestion on how to use your jar of egg yolks?  I can't stand when good food goes to waste.

Could you find a recipe that calls for whole eggs or just the yolks and make/bake it?  You don't necessarily have to eat it if you don't want to, you could donate it to a soup kitchen or give it to a friend.  One of my recipes, a German one...an Allerlei I believe calls for yolks.  If you can get to my recipes check that one out.  It's a vegetable dish and would be great at a party.

It's not the griping about the "health risks" of eating whole eggs that gets me (though it is annoying) it's that fact that people who only do egg whites buy whole eggs and waste the yolks. Yell

Thanks for sharing your opinions.  Thanks for offering a recipe.  "Wasting" egg yolks seems to me to be a non-issue, though.  I have done a lot of web research on this subject, and like disagreements about consuming artificial sweeteners and how much saturated fat we should eat, to eat or not eat egg yolks is not going to be resolved any time soon.  But I readily admit that you could be completely correct in your assumptions.  I can not prove that eating egg yolks is unhealthy.

In our small town we don't have a soup kitchen.  Also, none of the towns within reasonable driving distance do either.   I don't know that "wasting" yolks is any different than anything we buy, but don't eat all of.  Some people buy carrots, wash them off, and eat the whole carrot.  Others peel the carrots, discard the skin, and eat them that way.  If someone buys an apple and skins it--is it annoying that he/she threw the skin away?  I eat the entire apple often, except for the stem.  "Wasting food" is a rather ordinary activitiy engaged in by most of us.  How many people eat in a restaurant, don't finish all their food, and don't ask for a "doggy bag"? 

Since I don't think eating egg yolks is particularly healthy for many people, why would I use them in a recipe and then have someone else eat them?  I don't think eating the fat on the outside of a steak is healthy, so when I have relatives over, should I serve them steaks that have not had the outside fat removed?  Anyway, I have found enough doctors who question how many egg yolks we should eat per week that I tend to lean toward that view.

Because it is not your choice to make.  That is my opinion.  You can give them "fair warning" or share your own health views with them and then leave the ball in their court.  I understand your point of view on the egg thing and the "wasting food" thing.

I view the waste of food thing as discarding and not using any edible portion of food.  Examples are people who cut the crusts off of bread and IMO people who discard egg yolks or the whites without using them.  One could say I "waste" the core of the apple.  An apple is probably entirely edible, but I don't eat the core.

I have heard that 2 eggs in either a week or a day is fine.  Now I am 23 and perfectly healthy except for my liver disease so I have two eggs poached on toast on every Saturday.  You are older than me so you have to watch your health more closely than I do.  To each his own.  But I would like to stress that even though you believe something strongly (and even with evidence to support it) you should not remove other peoples' choice to believe something different.  I get really annoyed with people on CC sometimes who preach their [extreme] opinions to people as if they are law.  You do have the right to trim all the fat off of steaks you serve to your guests because you believe it is healthier, but you should also think about giving them the choice to have it.  I used to eat the fat and gristle...it tasted good.  If your guests don't want it they will remove it themselves.
