Recipe Ingredients for Mee Siam

1 kg rice noodle
500 g mung bean sprouts
600 g tofu
6 tbsp vegetable oil
20 g red chili
50 g shallots
2 cloves garlic
20 g shrimp paste
30 g dried prawns
100 g peanuts, mashed
3 tsp sugar
5 tbsp tamarind paste
150 ml water
50 g chives
1 egg, boiled

Recipe Directions for Mee Siam

  1. Grind chili, shallots, garlic, shrimp paste and dried prawns into a fine paste.

  2. Fry the paste until fragrant.

  3. Add peanuts, sugar, tamarind paste and water and mix well.

  4. Heat oil and fry beancurd until golden brown. Remove from pan and drain off excess oil on paper towels.

  5. Stir in beansprouts, rice noodles and tofu and mix thoroughly.

  6. Garnish with chives and boiled egg and serve
