This is a traditional Catalan dish served in Catalunya, Spain that is very healthy and generally low in calories as its main ingrediants are milk, and lemon zest, it is traditionally served with honey on top, but you can substitute for anything really, berries etc. So enjoy!

Recipe Ingredients for Mel i Mato

1 liter milk (pasteurized)
1/4 cup of lemon zest
25 grams white vinegar

Recipe Directions for Mel i Mato

  1. To make the "Mato" boil the milk with the lemon zest for 10 minutes. Allow to cool until its at 158F (70C) which is the temperature ideal for cutting it into servings.

  2. Add the vinegar slowly until the milk separates.

  3. Allow to cool, for a couple hours, so the "Mato" soaks in the buttermilk and will be softer.

  4. Remove the lemon zest.

  5. Strain the "Mato" using a thin cotton cloth. Put through a sieve until all the whey has separated.

  6. Remove the fabric and keep it in the refrigerator in an airtight container until its consumption.

  7. Serve with honey, or whatever substitutes you choose, enjoy!
