Mexican Fritata Recipe

Makes 4 servings


The is baked egg dish featuring salsa and cheddar cheese. The mixture can be prepared ahead of guests and baked for nice brunch. Serve with toast.

Ingredients
4 large eggs
1/2 cup green peppers, chopped
1/2 cup onions, chopped
1/2 cup mushrooms, chopped
4 tbsp salsa
1/2 cup cheddar cheese, shredded
1 tbsp olive oil
2 tbsp soy milk
Directions
  1. Fry veggies in olive oil, then add the salsa and fry until reduced.

  2. Add that mixture to a pie dish and sprinkle cheese on top.

  3. In a bowl scramble the eggs with the soy milk and add to the pie dish with veggies, salsa and cheese.

  4. Make sure the eggs and mixture are evenly spread.

  5. Bake 375 for 20- 30 minutes or untila knife is clear after being pushed in the center.
