Vegetarian stuffed pepper, only rice & cheese...
| 1 | green pepper |
| 1/4 | cup brown rice |
| 3 | tbsp salsa |
| 1/4 | cup Reduced Fat Mexican Cheese (shredded) or 2% cheddar cheese (shredded) |
- Cut top off & gut green pepper
- Cook rice as directed
- When rice is done, stir in the salsa
- Layer cheese, then rice/salsa, then cheese, then rice/salsa & finally cheese on top
- Bake in oven @ 375 for 5-7 mins (until cheese is melted)
