It should be easy if you have a large enough microwave bowl with lid.
put a couple of chicken breasts into the bowl with a chopped carrot, celery and onion. Cover with water to a depth of 1 or 2" over the top of the ingredients. You'll need a large container to prevent boil over.
Bring to a boil on high for 1 minute. Set the power at 50% and cook for at least 10 minutes. Check now and then to make sure the water level isn't dropping. It might take 20 minutes to fully develop the flavor.
Season and enjoy your soup.
I think it is possible, but I think the thing that makes homemade chicken soup so good is the whole chicken, I think the bones provide much of the flavor.
I would try simmering in the microwave 1 diced up chicken breast, some sliced carrots and celery and maybe a little garlic and onion powder or Mrs. Dash - Instead of plain water use some good quality low sodium canned chicken broth or that kind that comes in a big juicebox type container - the one at Trader Joes or Whole Foods is good, but most large super markets sell it. Low fat/low sodium.<br>

edited to add: cook as the above poster suggested: bring to a boil for a bit then cook at 50% power until the meat is cooked....sounds pretty good to me.
