Middle Eastern Chicken Stew

Recipe Ingredients for Middle Eastern Chicken Stew

2 tbsp olive oil
1 1/2 lb chicken, cubed
1 eggplant, cubed
2 onion, thinly sliced
4 carrots, sliced
2 cloves garlic
1/2 cup craisins
1/2 cup dried apricots
2 cups chicken broth
2 tbsp tomato paste
2 tbsp lemon juice
2 tbsp flour
1 1/2 tsp cumin
1 1/2 tsp ginger
1 1/2 tsp cinnamon
1 cup water

Recipe Directions for Middle Eastern Chicken Stew

  1. Heat oil in a large skillet. Brown chicken and eggplant in batches, just browning not cooking throughout. Place in slow cooker.

  2. Mix broth, water, spices, flour, tomato paste and lemon juice.

  3. Place vegetables and dried fruits in slow cooker. Pour broth mixture in over the rest of the ingredients in slow cooker. Cook 5 hours on high.

  4. Serve over rice.
