I'm trying to expand the range of foods that I eat, especially grains, I bought a bag of millet and tried preparing it in the same way I do with oats to make porridge but it was disgusting! What can I do with millet? Preferably quick and easy dishes. Thanks in advance!

cook it with less water and fluff it like rice.  Serve as you would rice.  I don't think I'd like it as a porridge either.

Millet is pretty bland on its own. Treat it as you would other grains. It can be substituted for bulgar in tabouli or mixed with a vinagerette and veggies for a salad. If you cook it in chicken or veggie broth it will have a bit more flavor. You might try adding toasted pine nuts, feta, and sun-dried tomatoes. Mix with legumes, tuna, chicken, cubed tofu, etc. It can also be added to soups in place of rice. If you are looking to expand your grain repertoire I recommend wheat berries. They are nutty, chewy yummy.

I experimented with millet a few weeks ago. It cooks just like quinoa but it's a little sweeter and definitely fluffier. I dry roasted the grain first, then added them to boiling water and simmered for 15 mins. After cooling for a bit, I added some chopped Blue Diamond Vanilla almonds, mixed raisins/cranberries/dried apples, cinnamon, a drop of Silk Light soy milk and maybe maple syrup or maple sugar or agave nectar.  Good healthy treat!

I LOVE wheat berries and add them whenever I cook brown rice--yummy. Do you know their nutritional value? Cal? fiber? etc.? Thanks. BTW, I also throw grains in my speghetti sauce, chili, soup, and lasagna to make them a bit more healthy.

I adore millet- I think it has a delicious nutty flavor. I usually throw mine in to my rice cooker and then mix it with veggies, black pepper, and garlic.

There is an old-fashioned russian dessesrt called caravai that you can bake.  First make a porridge out of 1 cup of millet and 2.5 cups of milk.  Then mix 2 egg yolks with 2 tbsp of sugar and mix that in with the porridge.  Add chopped dried apricots and prunes (as many as you want or can afford, calorie-wise).  Beat egg whites until fluffy and fold into the mixture.  Bake 30-40 at 350degrees.  It is very tasty.  You can add all-fruit spread when serving...

Forgot to say that the recipe above makes about 12 servings...

Oh my god. I love millet. My grandma boils millet and rice, then mixes it with a little milk, eggs, farmer cheese, and honey, and bakes in the oven. Yum! Not the best for the waistline, probably, but quite good anyway! :]

Thanks for the ideas everyone, they sound really great. I think I'll try cooking it savoury like rice to begin with because when I tried to make it a sweet porridge I found it quite bitter, maybe I'll try some of the sweet recipes when I'm feeling a little braver.

Try dry roasting the grains first: heat a skillet at medium-high heat. Pour in the dry millet and stir constantly until you start to hear the grains pop (~2-3 mins). Then transfer them to a strainer, rinse under cold water, then dump the millet into boiling water to cook.
