Asian inspired chicken soup, sans noodles.

Recipe Ingredients for Miso Chicken Veggie Soup(Slow Cooker)

12 oz chicken breast
1 tbsp miso paste
2 tsp chicken bouillon (or 2 cubes)
2 stalks celery
6 oz radish, daikon
1/2 cup chopped onion
1 cup chopped Portabella mushrooms
1 tbsp low sodium soy sauce
4 cups shredded bok choy
1 tbsp white wine
1/4 tsp ground ginger
3 1/2 cups water
1 clove garlic, minced

Recipe Directions for Miso Chicken Veggie Soup(Slow Cooker)

  1. Cut chicken and veggies(except baby bok choy) into bite-size pieces. Place in crock pot.

  2. Dissolve bouillon and miso paste into 3 1/2 cups of lukewarm water. Pour into crock pot. Add wine, soy sauce, and ginger to crock pot.

  3. *Optional* Add pinch of sugar. Pepper to taste.

  4. Stir. Cover and cook on low setting for 5 or 6 hours. No need to salt. The miso, soy sauce, and bullion should make this salty enough.

  5. about 2 minutes before serving, add baby bok choy to the crock pot. Ingredient list says shredded but you can make the bok choy any size you want.

  6. Stir well before serving, the miso settles.
