Miso Vegetable Soup Recipe

Low-calorie vegetable soup.

Ingredients
1 tbsp miso
1 stalk celery, chopped
1 vidalia onion, chopped
2 cloves garlic, chopped
3 white mushrooms, chopped
2 cups water
Directions
  1. Cook celery, onion, and garlic in microwave.

  2. Place cooked vegetables together with mushrooms into bowl with water and cook until the mushrooms are done.

  3. Put the miso into a cup and add broth from the soup, 1 tbsp or so at a time, and stir so as to dissolve miso.

  4. Pour miso mix into soup.

  5. Optionally add coriander leaves before serving.
